Ingredients:

1 cup peanut butter

1 cup light brown sugar

1 egg

Granulated sugar(just estimate)



Procedure:

  1. Preheat oven 350F(180C)
  2. Combine peanut butter, Brown Sugar and Egg in Medium bowl with mixing spoon until well blend. Mix well
  3. Roll heaping of dough into 1 1/2 inch balls. Place ball 2 inches apart on ungrease cookie sheets.
  4. Dip table fork into granulated sugar, Press criss-cross design into ball, fattening to 1/2-inch thickness.
  5. Bake 12 minutes or until set. Let cookies stand on cookie sheets 2 minutes.
  6. Remove cookies with spatula to wire racks: Cool completely.
  7. Store tightly covered at room temperature or freeze up to 3 months.

Makes About 2 dozen cookies


Ingredients:

2 1/2 Cups flaked coconut

2/3 cup mini chocolate chips

2/3 cup condensed milk

1 teaspoon vanilla


PROCEDURE:

  1. Set Microwave to 350'f (180'c) grease cookie sheets. (set aside)
  2. Combine coconut, chips, milk and vanilla in medium bowl, and Stir.
  3. Drop rounded teaspoonfuls of dough 2 inches apart onto prepare cookie sheet
  4. Drop dough gently with back of spoon to flatten slightly. 
  5. Bake 10 to 12 minutes or until light golden brown.  Let cookies stand on cookie sheets for 1 minute. Remove cookies with spatula to wire racks. Cool completely
  6. Store tightly covered at room temperature. These cookies do not freeze well.
